Chef James Redfern has finally found those abundant green pastures he's been dreaming of for some years. A passionate fan of the late Frédy Girardet, the legendary chef who believed that fresh food markets provided all the daily inspiration a chef needed, James Redfern is creating a “true country restaurant” since taking over Vines of Red Hill on the Mornington Peninsula in early 2007.
He's surrounded by fresh produce from nearby market gardens and farms, from the sea around the Peninsula and from the growing number of artisan producers who supply him with everything from hand-made cheese to aged cherry balsamic vinegar.
And he takes great pleasure in presenting ‘La Cuisine Saisonnière' that's inspired by the local produce available each day, his ‘Menu Spontanee' based on produce from the monthly Red Hill Market, and the degustation menus he'll create for guests based on their preferences for meat, poultry, vegetarian or gluten-free dishes.
On Sundays he invites guests to “put the phone away, relax and indulge” at his Sunday Indulgence brunch. A complr Royale (“the big kids' Ribena”) or non-alcoholic Red Hill Sunrise created from local fruit juices is served on arrival, followed by a leisurely brunch style menu that highlights the season's local gems.
Children are welcome (James is the proud father of baby Claire), and are encouraged to learn the pleasures of the table with a simplified version of the day's menu.
Vines of Red Hill is open for lunch Thursday – Monday and for dinner Friday and Saturday. The 80 seat restaurant is available for weddings and corporate events, while the restaurant and adjoining terrace can accommodate 120 for cocktail functions.
Four estate grown wines are available on site, a Pinot Noir, Chardonnay, Gewurztraminer and Pinot Gris under the Vines label.
